Vegan junk food platter made everything from scratch
Guilt free, Gluten free
Feeling so satisfying KFC style fried tofu-“chick’n”
1 Freeze firm tofu, and thaw naturally, squeeze water
2 Make batter (mixture of rice flour and, plant milk)
3 Make KFC seasoning mix(Potato or, corn starch, nutritional yeast, crashed corn flakes, sea salt, nutmeg, black pepper, turmeric, paprika powder, cumin, coriander, mustard powder, veggie stock, pinch cayenne)
4 Break tofu into pieces with hands, dip in the batter, coat with KFC seasoning mix, and deep fry
5 Served with maple mustard
Oyster mushroom “calamari”
1 Split oyster mushrooms lengthwise with fingers2 Dip in the batter (mixture of rice flour and, plant milk)
2 Coat with potato or corn starch, cornmeal, kelp powder, nutritional yeast, and sea salt and pepper
3 Deep fry
4 Served with tartar sauce (vegan mayo, chopped capers, dill, salt and pepper )
Pink slaw
1 Shred red cabbage, boil for 1.2 minutes, drain water
2 Add apple vinegar
3 Add vegan mayo, maple syrup, sea salt and pepper, mix well
