Tomato stew Great for hungover mornings

Last night, my uncle and auntie came over and I made this tomato stew, and salad (my mom called this borscht, if you know me for a long time, this borscht “like” is our family’s traditional meal), well, I was busy with hosting, drinking, and drinking

Yes, I woke up this morning with hungover…But this stew helped me a lot, the sourness of tomatoes made me feel much better ️

Tomato stew;
1 Cut atsuage tofu into cubes, coat with sea salt, black pepper, and nutritional yeast
2 Heat olive oil, pan fry until surface is golden brown, and set aside
3 Cut 1 large carrot, 4 medium size potato, 1/2 medium size cabbage, put everything into a pressure cooker, add atsuage tofu
4 Add a tin of whole tomato and crush with spatula, 2tins of water, 1TBS veggie stock , 2TBS ketchup, 1tsp sea salt, 1tsp white pepper, 2 bay leaves
5 Gently mix well with a spatula
6 Set timer for 9 minutes
7 Drizzle plant milk when you serve
