🥢Mapo tofu;
1 In a wok, heat sesame oil and canola oil, sauté chopped ginger, chopped fermented soy beans, red chili pepper, Doubanjiang(spicy miso paste), and precooked and rinsed TVP (minced soy meat)
2 Add 1.5 cups water, 1TBS mushroom powder
3 Cook until bringing to simmer.
4 Add tofu (cut into 1/2 square), simmer until tofu becomes tender (about 2min)
5 Adjust seasoning by adding salt, pepper, soy sauce, cayenne pepper, and gently mix well
6 Add slurry (1TBS starch and 1TBS water), and stir gently, add 1/2TBS sesame oil to give the dish a toasted smell
7 Sprinkle Sichuan peppercorns, and chopped cilantros
🥢Stir Fried bok choy
1 In a wok, heat sesame oil, add minced ginger, bok choy,, sauté 2 minutes
2 Sprinkle sea salt
