Carbonara used to be one of my favorite pasta, after I went vegan, I made vegan carbonara once in a while, but this one was the best I’ve ever made!!

Vegan carbonara
1 Make maitake mushroom bacon
Break the cluster, brush bacon mixture (canola oil, soy sauce, paprika powder, black pepper, maple syrup, and smoke liquid)
Put in a toaster for 5min
2 Cook pasta in a large pot of boiling salted water until very al dente, about 2 min less than package directions
3 Make carbonara sauce (serving 2)
In a bowl 1 cup soy or any plant milk, 3TBS vegan Parmesan, 1/2 tsp salt, 1tsp Vegg + 1/4 cup water (stir well with a whisk), black pepperMix everything until smooth
4 Drain pasta, back in a pot, pour carbonara sauce, stir with low heat for 2 min
5 Serve with Maitake bacon
