Fried tofu chick’n with lemon butter asparagus, and quinoa and mixed grains salad. So satisfying, and so happy for being vegan
Fried Tofu Chick’n
1 press firm tofu, drain water freeze it, and thaw naturally, squeeze water
2 make batter (flour, plant milk)
3 make seasoning mix(Flour, corn starch, nutritional yeast, salt, black pepper, curry powder, paprika powder, cumin powder, mustard powder, veggie stock , pinch cayenne)
4 break a tofu into pieces, dip in the batter, coat with seasoning mix and deep fry
Grain salad
1 Cook 1/2 cup quinoa with veggie broth until you see tiny spirals and cool it down
2 Add mixed grains (cooked barley, black rice, red rice), red kidney beans, diced cucumber, chopped tomatoes, black olives, and mints)
3 Dress with tahini, olive oil, lemon juice, cumin powder, and sea salt
