1 make ginger teriyaki sauce (soak sliced ginger in maple syrup , tamari or soy sauce, and water, pinch cayenne )
2 coat Maitake mushroom with potato or corn starch, salt and pepper
3 heat oil, pan fry Maitake mushroom until nicely cooked, pour ginger teriyaki sauce, and cook till glazed.
Serve with rice, grilled sweet green pepper, steamed broccoli dressed with vinegar and miso, radish, sweet and soy simmered TVP and pumpkin
