My husband made pesto genovese and I made roasted radicchio peperoncino 🌶
Pesto genovese
Fresh basil leaves, raw cashew nuts, olive oil, sea salt, one clove garlic, and vegan Parmesan Blend everything
Roasted radicchio peperoncino 🌶
1 Drizzle olive oil and sprinkle sea salt to radicchio, and roast until it becomes wilted
2 In a large skillet, heat olive oil, red chili pepper, and minced ginger
3 Add pasta al dente, and pasta water to emulsify
4 Add sea salt and pepper, drizzle truffle oil
Radicchio is one of my favorite vegetable, it tastes little bitter, but goes great with truffle oil ️️️
