Vietnamese baguette sandwich with mushroom “liver” pate, pickled carrot and daikon radish, and lots of cilantro.
Every time I eat banh mi, I feel exotic, love the fusion of France and Asia️
Mushroom “liver” pate;
1 Sauté mushroom with olive oil, salt and pepper, simmered with red wine
2 Boil tempeh, let it cool, drizzle soy sauce, liquid smoke, pinch cayenne
3 Blend 1&2, capers, sage, rosemary, clove, and paprika until looks like pate
🥕 Pickled carrot and daikon radish;
1 Chop the Daikon radish and carrot into matchsticks
2 Sprinkle salt and marinate with hands, after 10 minutes sitting, squeeze water
3 marinate with Vietnam pickles mixture (brown sugar, vinegar, chili pepper, crushed roasted peanut, and liquid amino)
