Roasted Bell Peppers, grilled pumpkin and zucchini, pan fried potatoes I love roasted Bell Peppers.
My husband used to make them, and were always delicious!! but since we live separately (for family reason), I haven’t had them for long time.
Yesterday’s morning, my next door gave me a lots of just-harvested peppers, so why not making them! I asked my husband the recipe , and turned out perfect!! so juicy and delicious!!
Roasted Bell Peppers
1 Grill until peppers have fully roasted. The skin should be charred and soft, and the peppers should look slightly collapsed.
2 Peel the skin in a bowl (don’t throw away the skin, seeds, and juice yet)
3 Marinate with olive oil, sea salt, black pepper, oregano, balsamic vinegar, and squeeze the juice from the skin and seeds
4 Put in a fridge
5 Actually my husband’s recipe continues…. dry the seeds, and plant them, yes, zero waste !!
Of course they are great with wine
