Sweet-and-sour tofu and Wonton
These are always my favorite
Sweet-and-sour tofu:
1 coat diced atsuage-tofu with potato or corn starch, salt and pepper.If you don’t find atsuage, extra firm tofu is good (press and drain water)
2 pan fry tofu, and set aside
3 cut carrots, green pepper, and cabbage into bite size
4 heat half sesame oil and half canola oil, sauté veggies, when carrots are soft, add tofu
5 pour sweet n sour sauce (3TBS brown sugar, 3TBS soy sauce, 3TBS rice vinegar, 2TBS ketchup, 1/2 cup water, and potato or corn starch )
6 stir gently until everything is glazed
Wonton for 20pieces
1 make fillingsYou will need 1/4 atsuage-tofu, or extra firm tofu, 1/4 cup TVP (boil, rinse, and squeeze water), 3 shiitake mushroom
2 blend everything with pulse
3 sprinkle salt and pepper, add 1TBP miso, 1/2TBP canola oil, and mix well with hands
4 place 1/2tsp fillings in the center of wonton wrapper
5 fold wonton in half to create triangle, wet edges to seal each
6 boil water, throw wonton one by one slowly
7 cook 3 minutes
8 serve with shredded ginger, and chili pepper flakes
