Mom requested cold noodle with teriyaki Maitake mushroom, and I thought it sounds good, ‘cause yesterday was the hottest day, so I made it with little twists
make mushroom broth (serving 3)
boil 3cups of water, add 4-5TBS soy sauce, 1tsp kelp powder, 1.5TBS maple syrup, add slice shiitake mushroom, and shimeji mushroom, heat until mushrooms are cooked, and cool down
make teriyaki Maitake mushroom
1 make teriyaki sauce (mixture of maple syrup , tamari or soy sauce, and water, pinch cayenne )
2 coat Maitake mushroom with potato or corn starch, salt and pepper, and shichimi peppers
3 in a frying pan, heat small amount of canola oil, pan fry Maitake mushroom until nicely cooked, pour teriyaki sauce, and cook till glazed
make oyster mushroom calamari
1 split oyster mushrooms lengthwise with fingers
2 coat with flour, cornmeal, nutritional yeast, and sea salt and pepper
3 in a frying pan, heat olive oil, pan fry oyster mushroom until crispy
Serving:
Place cold noodle in a plate, pour cold mushroom broth, put teriyaki Maitake, and crispy oyster mushroom, and little greens (I used boiled spinach) on top
