This is my powder up minestrone
1 cut carrot, potato, celery, and eggplant into small cubes, cut cabbage into bite size
2 put veggies in a large sauce pan, add a tin crushed tomato, 3cups of water, 1TBS veggie stock , 2TBS ketchup, 1/2TBS maple syrup, sea salt, white pepper, and bay leaf
3 bring this to boil on medium heat then simmer for about 20 minutes or until carrots are cooked
4 add mixed beans, I used red kidney beans, chickpeas, and green peas
5 simmer for 5 minutes
6 sprinkle black pepper, and drizzle olive oil
