Mexican plate

I was inspired by yesterday’s Taco Tuesday 🌮
Well, Japan was already Wednesday, but don’t care, I craved Mexican food so much, so made tofu fajitas, and grilled Mexican corn, which were so delicious and satisfying

Tofu fajitas
1 cut atsuage tofu into cubes
2 coat with light sea salt, pepper, and nutritional yeast
3 make fajita liquid (mixture of olive oil, lime or lemon juice, chili flakes , paprika powder, red pepper pepper, cumin, oregano, coriander powder, black pepper, sea salt)
4 slice green and yellow peppers
5 marinate peppers and tofu with fajita liquid for 15 minutes
6 sauté them

Grilled Mexican corn
1 grill the corn
2 while grilling, make dipping sauce, (mixture of vegan mayo, cayenne, lemon juice, parsley, vegan Parmesan, salt and pepper)Served with tortillas, salsa, avocado, jalapeños and tofu ricotta
