Mediterranean summer skewers and quinoa salad 

Enjoying the taste of summer ️Now the summer veggies are so juicy and tasty

Mediterranean summer skewers;
The veggies I used we werecorns, eggplants, red and yellow peppers, green and yellow zucchinis , oyster mushrooms, and grape tomatoes Just marinate the veggies with olive oil and sea salt and rainbow peppers, and grill

Atsuage tofu kebab
1 break atsuage tofu with hands
2 make batter (flour, plant milk)
3 make kebab seasoning mix(Potato starch, nutritional yeast, salt, black pepper, paprika powder, cumin powder coriander powder, oregano, basil, thyme, turmeric, pinch cayenne)
4 dip atsuage tofu in the batter, coat with seasoning mix and grill

Kebab sauce
1/2 cup plain dairy-free yogurt, chopped 2TBS ketchup , 1TBS lemon juice, pinch cayenne, sea salt and pepper, 1tsp vegan mayo, drizzle olive oil Mix all together

Quinoa salad
1 in a small sauce pan, 1/2 cup quinoa , 1cup water, cook until boiling with high heat, then low heat , cook for 10 min., you will see tiny spirals then cool it down
2 Add diced cucumber, radish, grape tomatoes, chickpeas, red kidney beans, green peas, and chopped mint leaves
3 Dress with tahini, olive oil, lemon juice, cumin powder, and sea salt
