Baba ghanoush with pita bread, tofu-kebabs with yogurt sauce, and quinoa salad So delicious and satisfying

Smoky Baba ghanoush
1 Roast the 2 large eggplants until surface is burnt.
2 put in the cold water, then peel off the skin, save the eggplant liquid
3 in a food processor, blend 5-6TBS tahini, 3TBS lemon juice, 1tsp cumin powder, and 1tsp sea salt
4 add eggplant, eggplant liquid 1/2tsp smoke liquid
5 blend until smooth
6 drizzle olive oil, sprinkle pepper and paprika powder

Atsuage tofu kebab
1 break atsuage tofu with hands
2 make batter (flour, plant milk)
3 make kebab seasoning mix(Potato starch, nutritional yeast, salt, black pepper, paprika powder, cumin powder coriander powder, oregano, basil, thyme, turmeric, pinch cayenne)
4 dip atsuage tofu in the batter, coat with seasoning mix and pan fry

Dill yogurt sauce
1/2 cup plain dairy-free yogurt, chopped 2TBS dill, 1TBS lemon juice, pinch cayenne, sea salt and pepper, drizzle olive oil
