Mediterranean skewers;
1 boil corn for 4-5minutes, and cut
2 cut eggplant, and atsuage or extra firm tofu
3 marinate everything with olive oil, sea salt, rainbow peppers, and kebab seasoning mix (nutritional yeast, paprika powder, cumin powder coriander powder, oregano, basil, thyme, turmeric, pinch cayenne)
4 grill them until nicely burnt
Quinoa salad
1 in a small sauce pan, 1/2 cup quinoa , 1cup water, cook until boiling with high heat, then low heat , cook for 10 min., you will see tiny spirals then cool it down
2 while cooking quinoa, roast chickpeas, sprinkle sea salt, cumin powder, black pepper, pinch cayenne, and set aside
3 Add diced cucumber, radish, grape tomatoes, chickpeas, chopped mint leaves to quinoa
4 Dress with tahini, olive oil, lemon juice, cumin powder, and sea salt
