Mediterranean night 

Greek quinoa salad Recipe inspired by @cookingforabetterlife , It was so delicious and satisfying
The veggies I used were cucumber, spinach, parsley, chickpeas, red kidney beans, and green peas

Hummus and fried pita
1 in a blender, a tin of chickpea (drain and rinse, save some for garnish)
2 add 1/2tsp sea salt, 1tsp cumin powder, pinch of chili powder, 1TBS lemon juice, 1TBS olive oil, 1/4 cup water
3 blend until smooth
4 add 2TBP tahini
5 blend again, if it’s too thick add more water

lemon soy chick’n soup
1 boil soy curl, drain and squeeze water
2 in a medium sauce pan, heat olive oil and pan fry soy curl, sprinkle salt, pepper, and nutritional yeast
3 add 4cups water, cook to boil, add 1/4cup couscous, veggie stock, 2TBP lemon juice, sea salt and black pepper
4 serve with fresh parsley

It really was a perfect Mediterranean night
