Mapo tomato and Chinese stir fry 

Lots of tomatoes came from my friend’s garden That’s why I love summer !! Veggies are everywhere
So me and my mom just ate as it is, the best way to eat fresh tomatoes, right
And first time I made mapo tomato, which was tangy, sweet, and juicy, yes!! indeed was delicious

Mapo tomato You will need 4 large tomatoes
1 remove tomato skins (cut a shallow X in the bottom of a tomato, throw them into a pot of boiling water for no more than a minute, transfer tomato to the bowl of ice water and allow to cool, then peel the skin off)
2 cut tomatoes into wedges 3 heat sesame oil in a large skillet, sauté chopped ginger, red chili pepper, Doubanjiang(spicy miso paste), and precooked and rinsed TVP
3 add tomatoes, 1TBS mushroom powder
4 cook until bringing to simmer
5 adjust seasoning by adding salt, pepper, soy sauce, cayenne pepper, and gently mix well
6 add slurry (1TBS starch and 1TBS water), and stir gently
