Maitake “shrimp” mayo with caramelized walnuts
1 season Maitake mushroom with grated ginger, sea salt, kelp powder, rub with clean hands, and leave for 10 min.
2 make mayo mixture 2TBS vegan mayo, 1/2TBS ketchup, 1tsp maple syrup, 2tsp plant milk, 1/2tsp tamari or soy sauce
3 coat Maitake mushroom with corn or potato starch, sauté with canola oil
4 turn off heat, pour mayo mixture, and marinate Serve with caramelized walnuts (roast walnuts and pour maple syrup, low heat until caramelized)

Buddha rolls
1 heat sesame oil, sauté cabbage, carrots, shiitake mushroom, Bamboo shoots, TVP(cooked and rinsed), and vermicelli, sprinkle sea salt and pepper, vegan oyster sauce
2 place wrapper (rice paper) like diamond, place shiso leaf, 2TBS fillings near corner, tightly roll the wrapper, fold over left side, fold over right side, paint a little flour and water mixture along the edge and close it up
3 pan fry until surface is golden brown
