Korean night

I’ve been so into Korean drama these days on Netflix called “Itaewon class”, in the drama, they often eat spicy tofu soup, which looked really tasty, so I wanted to have it too

🌶 Sundubu (spicy Korean tofu soup)
1 boil 4cups water, add minced ginger, quarter sliced carrots, daikon radish, sliced shiitake mushroom, enoki mushrooms, aburaage, and kimchi or Chinese cabbage|
2 add 2TBS Gouchujang (Korean spicy miso paste), 1TBS miso, 1TBS soy sauce, 2tsp cane sugar, 1tsp cayenne pepper, 1TBS mushroom powder, 1/2TBS kelp powder, 1/2tsp white pepper,
3 break tofu with hands, and add to the soup, drizzle sesame oil

🥞 Buchimgae (savory Korean pancake)
1 in a bowl, mix chopped cabbage, edamame, corn, pickled red ginger
2 sprinkle kelp powder, salt, pepper, rice flour, and potato or corn starch
3 in a frying pan, heat some sesame oil
4 cook small pancakes
5 serve with mixture of soy sauce and vinegar, and some chili peppers
