It’s been so hot lately, so we’ve been eating easy meals, such as cold noodles, just salad, Chinese stir fry, curry…
but wanted to have a complete meal, so I cooked “decent meal” last night, and was so delicious and satisfying!!!
Tofu Fillet
1press firm tofu, drain water, coat with seasoning mix (nutritional yeast, corn meal, flour, sea salt , black pepper )
2 in a large skillet, heat olive oil, pan fry until surface is golden brown.
Mayo yogurt sauce
1/2 cup plain dairy-free yogurt, 1TBS dill, 1TBS vegan mayo, 1TBS lemon juice, pinch cayenne, sea salt and pepper, Mix all together
Beets and veggie soup
1 in a sauce pan, boil water, cook diced carrots, potatoes, zucchini, cabbage, beets, and add beets water
2 add 1TBS nutritional yeast, 1/2tsp sea salt, sprinkle white pepper
3 add ketchup and grape tomato
Bulgur salad
1 in a small sauce pan, 1/2 cup bulgur, 1cup water, cook until boiling with high heat, then low heat , cook for 10 min., and cool it down
2 add diced cucumber, radish, grape tomatoes, chickpeas, red kidney beans, and green peas, basil leaves, tofu ricotta
3 Dress with olive oil, lemon juice, sea salt, and black pepper
