Cheesy potato spring rolls and Sweet and soy simmered pumpkin
I go grocery shopping once a week, and one day before shopping is kind my exciting day, ‘cause I have to use my imagination for what I can make with the fridge leftovers, what a fun to create new things
🥔 Cheesy potato spring rolls
1 cut potato into sticks, and sauté, sprinkle salt and pepper
2 boil spinach, drain and squeeze water, cut into bite size, splash soy sauce
3 fold potato, spinach, and vegan cheese with rice paper
4 pan fry
Sweet and soy simmered pumpkin:
1 cut pumpkin into bite size,
2 in a sauce pan, place pumpkin, add water and boil
3 add mushroom powder, TVP (soaked and rinsed), vegan oyster sauce, maple syrup, soy sauce, and simmer until pumpkin is cooked4 add potato starch, cooked broccoli , and drizzle sesame oil
