Curry flavored cauliflower steak with dill yogurt sauce
1 Cut thick slice cauliflower about 1 inch
2 Boil for 5min
3 Pour plant milk and lightly coat with curry seasoning mix (flour, nutritional yeast, salt, nutmeg, black pepper, turmeric, paprika powder, cumin, coriander, mustard powder, veggie stock , pinch cayenne)
4 In a large skillet heat olive oil, and pan fry
Dill yogurt sauce
1/2 cup plain dairy-free yogurt, chopped 2TBS fresh dill, 1TBS lemon juice, pinch cayenne, sea salt and pepper, drizzle olive oil Mix all together
Quinoa salad
1 Cook 1/2 cup quinoa with veggie broth until you see tiny spirals and cool it down
2 Add diced cucumber, chopped Swiss chard, grape tomatoes, chickpeas, red kidney beans, and green peas
3 Dress with tahini, olive oil, lemon juice, cumin powder, and sea salt
