Tofu meunière and cream of broccoli, mashed potatoes with avocado salad
Tofu meunière
1 press firm tofu and drain water
2 sprinkle sea salt and pepper, coat with flour
3 pour 1TBP plant milk on each side
4 coat with corn meal and nutritional yeast
5 heat olive oil and pan fry the first side until crispy, flip and add white wine and cook the other side
6 make sauce;remove tofu meunière from a pan, add vegan butter melt until golden brown add parsley, lemon juice, and capers
Cream of broccoli 🥦
1 make cashew cream; boil water, turn off heat, add 1/2cup raw cashew, leave it for 10min
2 drain water, transfer to a blend, add 1cup plant milk, blend until smooth, and set aside
3 in a medium pot, boil broccoli in 2cups veggie broth, transfer to a blender, blend until smooth,
4 back into a pot, add cashew cream, add 1cup plant milk, nutritional yeast, stir with low heat
5 adjust seasoning with sea salt and pepper
