The soup is thicker than the usual clear noodle soups, and the creamy colour is from the sesame paste (or tahini) and chilli paste.
The side is sesame flavored tofu-egg and edamame mixed rice.Noodles and rice, I know this is too much carbo, but can’t help 🤣🤣🤣
🥢Spicy Dan Dan soup (serving for 3)
boil 3cups water, add 1TBS mushroom powder, 2TBS tahini, 1TBS miso paste, 1TBS tamari or soy sauce, 1TBS peanut butter, 1TBS Chinese chili bean paste, and, add 1.5cup plant milk, sprinkle white pepper

1 boil and rinse minced soy meat, squeeze water
2 in a frying pan, heat sesame oil, sauté grated ginger, 1TBS Chinese chili bean paste, minced shiitake mushrooms, and soy meat
3 add 1cup water, add 1TBS miso, simmer for 3 minutes
4 add mixture of starch and water
5 stir to mix
6 sprinkle Sichuan peppercorns
