Creamy Chickpea Coconut Curry with Coconut & Fig Chutney Rich and creamy!

🥥 Creamy Chickpea Coconut Curry
1 roast a tin of chickpea, sprinkle sea salt, cumin powder, black pepper, pinch cayenne, and set aside
2 in a large skillet , heat coconut oil, sauté diced carrots, potatoes, and pumpkin
3 add 3/4tsp salt, 2TBS curry powder (pepper, cumin, turmeric, coriander, chili powder, garam masala)3 add 1cup water, and simmer until carrots are soft
4 back in chickpeas, add diced tomatoes, sprinkle grilled corn
5 pour 2cups coconut milk, simmer 15 minutes
🥥 Coconut chutney
Coconut flakes, ginger, red chilies or Serrano peppers, sea salt, normally tamarind or dried mango.Blend everything I didn’t have tamarind, or mango, so used dried figs, which was tasty also!!, I guess any dried fruits will work
