Chickpea curry
1 in a frying pan, heat coconut oil, sauté diced carrots, potatoes, and pumpkin
2 add salt, pepper, cumin, turmeric, coriander, chili powder, garam masala
3 add 1.5cup water, and simmer 5 minutes
4 add a tin of rinsed chickpeas, green peas, diced tomatoes
5 pour 2cups coconut milk, simmer 15 minutes

Coconut chutney
You will need coconut flakes, ginger, red Thai chilies, dried apricot, and sea salt
