Corn cream pasta with roasted Brussels sprouts

Slow calm holiday Martin Luther King Day.
My husband was doing some DIY thing, and my daughter’s boyfriend came over, and I made quesadillas for their breakfast, and me and my husband had late lunch.

Corn cream pasta sauce
1 soak cashew, rinse and blend with almond milk and corn
2 in a small sauce pan, pour blended cashew and corn cream, add water, more corn, nutritional yeast, salt and pepper, and heat with medium heat
3 add roasted Brussels sprouts I added leftover bolognese, and went great
