Feeling Nachos last night, but didn’t have tortilla chips, so made chili with rice, and was so satisfying ️
🌶 Chili sin carnered kidney beans, TVP(cooked and rinsed), a tin of whole tomato, cumin, coriander, cayenne, maple syrup, salt, canola oil, liquid smoke
Cook until everything is absorbed well
Cashew sauce
raw cashew (soaked in hot water and rinsed), blend with half water, half plant milk. Heat until it becomes creamy, add pinch salt
Sour cream
firm tofu(press and drain water), salt, and lemon juice, blend everything
Serve with mashed avocado (avocados, lemon juice, cumin, pepper), cilantro, tomato, jalapeños, and hot sauce.
