Craved okura curry so bad last night, so… here it is Delicious and satisfying
Aloo Bhindi masala
1 cut potatoes into cubes, and boil with light salt
2 while cooking potatoes, heat coconut oil in a skillet over medium heat, add mustard, cumin seeds, finely chopped ginger, chili flakes and cook until mustard seeds start to pop
3 make some space in a skillet to sauté curry powder (turmeric, coriander, cumin, and cayenne) and mix with spices
4 add okura, curry leaves, transfer potatoes to a skillet , sprinkle pinch hing
5 add a tin of whole tomato, and crush with spatula and simmer
6 add sea salt and adjust seasoning
7 sprinkle some garam masala and mix in
8 serve with basmati rice
Red cabbage pickles
1 shred red cabbage, boil for 1.2 minutes, drain water
2 soak in a pickles liquid :Boil the pickles mixture (vinegar, white wine, maple syrup, salt, and chili)
