Eggplant keema curry

Eggplant keema curry Easy quick meal last night
1 cut eggplant into quarter-rounds
2 in a large skillet, heat canola oil, sauté eggplant, and set aside
3 in a same skillet, add more oil, sauté cooked and rinsed Minced soy meat, minced ginger, add red chili, and 1.5TBS curry powder, stir to mix
4 back in eggplant
5 add 2TBS Worcestershire sauce, 2TBS ketchup, 1/2TBS maple syrup 1TBS soy sauce, 1/4cup water, sprinkle black pepper, simmer for 5 minutes

I went surfing yesterday, yes, It’s been a long while!!
Not like Hawaii, 1.5hours driving to the ocean here I live now.
Water was cold, of course I needed wetsuit, and I felt my body got old but the ocean gave me lots of great energy
I had to come home before my father (he goes to day rehab service), so only surfed two hours and another 1.5 hours drive home.

This Keema curry is so easy to make and I recommend it when you don’t have much time to cook
