Mapo tofu is one of my favorite Chinese food, so tasty so easy to make
Mapo tofu;
1 Heat sesame oil in a large skillet, sauté chopped ginger, chopped fermented soy beans, red chili pepper, Doubanjiang(spicy miso paste), and precooked and rinsed TVP
2 Add 1.5 cups water, 1TBS mushroom powder, cilantro stems
3 Cook until bringing to simmer.
4 Add tofu (cut into 1/2 square), simmer until tofu becomes tender (about 2min)
5 Adjust seasoning by adding salt, pepper, soy sauce, cayenne pepper, and gently mix well
6 Add slurry (1TBS starch and 1TBS water), and stir gently
7 Sprinkle Sichuan peppercorns, and chopped cilantros
